HONEY CREAM CAKE

SPONGE CAKE
• 40 EGGS
• 2.2KG GRANULATED SUGAR
• 100ML VANILLA
• 2.4L BUTTERMILK
• 900ML HONEY
• 2.9KG ALL PURPOSE FLOUR
• 60GR BAKING POWDER
• 80GR BAKING SODA
CREAM
• 6L 35% CREAM
• 150GR SUGAR
• 150GR HONEY

1. WEIGH / MEASURE ALL INGREDIENTS
2. COMBINE SUGAR / HONEY IN A MIXER, CREAM
3. ADD EGGS SLOWLY, THEN VANILLA
4. ADD BUTTERMILK / DRY INGREDIENTS IN BATCHES, SWITCHING BETWEEN INCREMENTS OF MILK THEN DRY INGREDIENTS UNTIL INCORPORATED
5. ADD TO CAKE PAN, COOK AT 350F FOR 30 MINUTES UNTIL TOOTHPICK TEST COMES OUT CLEAN
6. LET COOL
7. MAKE WHIPPED CREAM, MIXING ALL INGREDIENTS TOGETHER UNTIL SOFT PEAKS ARE ACHIEVED
8. TRIM CAKE FOR LAYERING (CUT TOP OFF TO MAKE EVEN FLAT LAYERS)
9. TRIM SPONGE CAKE FOR 3 LAYERS
10. MAKE 3 LAYERS, ADDING HONEY CREAM IN BETWEEN EACH LAYER OF SPONGE CAKE
