Ingredients:

  • 1 cup rolled oats
  • 1 cup Better Basics Whole Wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup Paradis Valley Honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the rolled oats, flour, baking soda, ground cinnamon, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter and Paradis Valley Honey until smooth and well combined.

  4. Add the egg and vanilla extract to the butter-honey mixture and beat until fluffy.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in raisins or chocolate chips.

  6. Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
