Fall is probably my favourite season of the year.
The threat of wildfires subsides, the leaves turn from green to gold (in northern Alberta at least), scorching summer heat gives way to more comfortable temperatures, the bugs disappear, and I can still enjoy a simple sunset meal on the back deck with my family now that pollen and honey extraction is done for the year.
My friend Jenna – also a small business owner who lives in the area (join me in supporting local!) – introduced me to this spiralized roasted beet salad that has become one of my favourite “no fuss, no muss” meals.
Beetroots, commonly known as beets, are a popular root vegetable used in many cuisines around the world. They’re packed with essential vitamins, minerals, and plant compounds – some of which have medicinal properties. They’re delicious and easy to add to your diet!
As a matter of fact, I’m going to pick some beets from Jenna’s garden as soon as I finish writing this post (shhhhh, don’t tell her!).
